Few fruits say "summer" like blueberries. I could eat them by the quart during these warm summery months.
Evidently I'm not the only one, because someone came up with the idea of celebrating blueberries every July 8th.
Typically I just eat them plain by the handful.
But every now and then, I get in the mood for something super soothing and warm with a dollop of vanilla ice cream melting into purple puddles. That's the way I remember my first Blueberry Betty.
If you're at a loss for how to celebrate National Blueberry Day, do yourself a favor, and try this recipe. I promise that you won't regret it.
